Equipment

  • Baking sheet
  • Parchment paper
  • Air fryer or oven

Ingredients

  • 1 pound salmon fillets skin-on, cut into 3-4 portions*
  • 1 Tbsp avocado oil or neutral olive oil
  • 1 tsp coconut sugar or honey/maple syrup, but sugar crisps better, brown sugar works but is not refined sugar free
  • 1 tsp smoked paprika
  • 1/4 tsp sea salt or adjust to taste
  • 1/4 tsp garlic powder
  • 1/4 tsp black ground pepper
  • Lemon or lime wedges for serving

Instructions

  • Prep the Salmon: Pat the salmon fillets dry with a paper towel. Brush all sides (including the skin) with avocado or olive oil.
  • Season: In a small bowl, mix the coconut sugar, smoked paprika, sea salt, garlic powder, and black pepper. Sprinkle the seasoning evenly over the top of each fillet, gently pressing it in.
  • Rest: Let the seasoned salmon sit for 10 minutes while you preheat your air fryer or oven to 400°F (200°C).

Cook:

  • Air Fryer Method: Place the fillets skin-side down in the air fryer basket (no need to flip). Cook at 400°F for 8-11 minutes, depending on thickness and desired doneness. We like it just cooked—firm but still tender. Check for flakiness with a fork.
  • Oven Method: Place the fillets skin-side down on a parchment-lined baking pan. Bake at 400°F for 12-15 minutes until firm and cooked to your liking.

Notes

*Don’t Overcook*: Salmon is best when just done—aim for an internal temperature of 135-140°F for medium. It’ll be juicy and flaky. Some people prefer it less cooked/slightly raw in the middle. We love it JUST cooked through.
*Sides We Love*: Pair with steamed veggies, roasted potatoes, a green salad, or quinoa for a balanced meal. My husband and kiddo love it with sweet potato fries!
*Storage**: Leftovers keep in an airtight container in the fridge for up to 2 days. Reheat gently in the oven or enjoy cold in salads.
If salmon is cut into 4 ounce portions, each portion will have roughly 24-25 grams of protein. If you are serving 3 and portions are a little over 5 ounces, each serving will have 32-33 grams of protein.
