Mix all ingredients together in a stand mixer. Let sit for 10 minutes. (Batter will look wet, this is okay.)
Preheat the oven to 350F and line a cookie sheet(s) with parchment paper, silpat mat or lightly grease.
Scoop out dough into two tablespoon cookie scoops.
Bake for 15-20 minutes or until lightly golden. Let cool for 5-10 minutes before removing, otherwise they might fall apart.
