Easy Spring-y Egg Salad

Ingredients
  

  • 4 hardboiled cage-free eggs, peeled and chopped*
  • 2 scallions, chopped
  • 3-4 radishes, small diced
  • 1-2 Tbsp Vegenaise (or mayo)
  • 1 Tbsp plain Greek yogurt (or sour cream or more mayo)
  • 1 tsp dijon mustard
  • salt and freshly ground black pepper to taste
  • 1/2 to 1 tsp apple cider vinegar

Instructions
 

  •  Combine all of the ingredients in a medium bowl and stir until combine. Adjust seasoning with salt and pepper if needed and enjoy!
