Ingredients
  

  • 16 oz cottage cheese 2% or 4% - Good Culture is THE BEST
  • 2 Tbsp cream cheese 1/3 less fat or full fat
  • 1 tsp vanilla extract
  • 1 cup blueberries washed
  • 3/4 cup + 1/2 cup strawberries washed and diced (or your favorite fruit)
  • Monk fruit sweetener I like liquid drops or 2-3 Tbsp maple syrup, date syrup, honey or coconut nectar

Instructions
 

  • Combine cottage cheese, cream cheese, sweetener and vanilla in food processor or blender until creamy.
  • Remove 2/3 of the cottage cheese mixture and setting aside in a separate bowl for layering. Add in 1/2 cup chopped strawberries and blend again. It should be tinted slightly pink.
  • To serve, take half of the reserved white filling mixture and divide between two jars to create bottom layer.
  • Divide remaining strawberries between the jars and sprinkle on top of bottom layer.
  • Divide pink strawberry cottage cheese filling between two jars and layer on top of the diced strawberries.
  • Divide blueberries between the jars and sprinkle on top of the strawberry layer.
  • Divide the remaining white cottage cheese filling between the two jars.
  • If desired, sprinkle in a few strawberries and blueberries for color.
  • Enjoy immediately or cover with lids if using jars.
